Sweet Potato Turkey Shepherd's Pie

Yield: 6 servings

Ingredients:

Potatoes:

• 1-1/2 lbs (2 large) sweet potatoes, peeled, diced
• 3 cloves garlic
• 1 tsp salt
• 1/4 tsp pepper
• 1/4 cup chicken broth

Filling:

• 1 lb ground turkey
• 1 medium onion, diced
• 1 carrot, diced
• 2 cloves garlic, diced
• 2 TBSP flour
• salt and pepper
• 10 oz frozen mixed vegetables 
• 1 cup chicken broth
• 1 tsp Worcestershire sauce

Directions:

1. Boil sweet potatoes, garlic and salt until soft. Drain and mash with broth and pepper. 
2. Preheat oven to 400°F.
3. Cook turkey; set aside.
4. Cook onions, carrots, and garlic about 12 minutes.
5. Add flour, salt and pepper and mix well.
6. Add mixed vegetables, broth, Worcestershire sauce, turkey, and simmer about 5-10 minutes. 
7. Spread mixture in 9x13 casserole dish.
8. Top with mashed sweet potatoes.
9. Bake 20 minutes.
