Sweet Potato Turkey Shepherd's Pie

Ingredients:
Potatoes:
- 1-1/2 lbs (2 large) sweet potatoes, peeled, diced
- 3 cloves garlic
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 cup chicken broth
Filling:
- 1 lb ground turkey
- 1 medium onion, diced
- 1 carrot, diced
- 2 cloves garlic, diced
- 2 TBSP flour
- salt and pepper
- 10 oz frozen mixed vegetables
- 1 cup chicken broth
- 1 tsp Worcestershire sauce
Directions:
- Boil sweet potatoes, garlic and salt until soft. Drain and mash with broth and pepper.
- Preheat oven to 400°F.
- Cook turkey; set aside.
- Cook onions, carrots, and garlic about 12 minutes.
- Add flour, salt and pepper and mix well.
- Add mixed vegetables, broth, Worcestershire sauce, turkey, and simmer about 5-10 minutes.
- Spread mixture in 9x13 casserole dish.
- Top with mashed sweet potatoes.
- Bake 20 minutes.
